My husband is home sick today so I made him chicken noodle soup. My mother taught me how to make it. Not that it's all that hard, in fact, it's really easy.
Just the aroma of it cooking brings back memories and a good base for cappaletti. Cappaletti means 'little hats' in the Italian language. But for every day, noodles are just as good. Everyone has their own way of making soup, but this is my way.
Chicken Noodle Soup
Fill your soup pot 3/4 of the way with water. Add big chunks of celery, including the leaves about 3 stalks, about 3 large carrots, peeled and cut in chunks, 2 onions cut in quarters, chicken, breasts or thighs, salt, pepper, 3 chicken bouillon cubes, a bunch of fresh parsley and about 1/2 c. grated cheese. Bring to a boil and then simmer for about an hour or until the chicken is cooked and the carrots are soft. Let it cool a little and strain every thing out of the broth. Mash some of the carrots and shred the chicken and put it back in the soup, add noodles of your choice and cook. Breathe in that delicious smell and enjoy! |
