Want to make pancakes and don't have a pancake mix or even Bisquick mix? Don't worry! This is the best recipe I have for pancakes made from scratch. You probably have all the ingredients already. They are very light and fluffy and delicious. You can add blueberries or chocolate chips in the mix or just slice bananas right on top like I did. My husband always eats them like that. Add whatever you like, fresh fruit or strawberries with syrup or whipped cream on top. This recipe makes 6 pancakes.
Best Ever Homemade Pancakes
3/4 c. 2 % milk
2 tblsps. white vinegar
1 cup flour
2 tblsps. white sugar
1 tspn. baking powder
1/2 tspn. baking soda
1/2 tspn. salt
1 extra large egg
2 tblsps. melted butter
butter flavor cooking spray (adds more flavor)
Combine milk with vinegar in measuring cup and set aside for a couple of minutes till it looks sour.
Combine flour, sugar, baking powder, baking soda and salt in a medium size bowl. Pour the wet mixture into the flour mixture and whisk until there are no long any lumps. Don't over mix.
Heat a large skillet over medium heat and coat with butter flavor cooking spray. Pour a large spoonful of batter (or as much as you want) onto the skillet and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side. Serve while hot. Have a happy breakfast!
