Sometimes you want pasta with meatballs and sauce but just don't have the time. That happened to me last Sunday afternoon. So I made this sauce and in less then 45 minutes dinner was on the table. I've made this so many times before but because some of the ingredients were right from the yard, it tasted so much better. The green pepper, onion, tomatoes, basil and oregano were just picked. Recipe to follow:
Quick Loose Hamburg Tomato Sauce
1 small green pepper, chopped
1 small onion, chopped
2 cloves of garlic chopped
2 or 3 tomatoes peeled and chopped
1 jar of your favorite tomato sauce
fresh basil, chopped
fresh oregano, chopped
1 1/2 lbs. hamburg
3 tbspns. extra virgin olive oil
salt, pepper and grating cheese all to taste
In a large frying pan, heat the oil and sauté the peppers, onions, garlic and tomatoes till tender. Add the hamburg and season with salt and pepper to taste. Add your sauce and add some grating cheese and 1 pinch of sugar. (I do mean a pinch).
Cover and while that is simmering cook your pasta. Spaghetti if fine but I think a short pasta is best with this. When the pasta is cooked drain and put it in a bowl and mix as much or little sauce as you like. I cook a whole pound for my husband and me and it's enough for that meal and left over for the middle of the week. |
