The original recipe came from the allrecipes.com web site. I put my own spin on it and made it banana strawberry muffins. I gave it a little crunch on top by sprinkling very coarse sugar on top before baking. They are very moist and delicious. Good for an after school snack or with coffee in the evening. My husband got used to having coffee every evening between 6:30 and 7:00. His family did that ritually and so we kept it up. Recipe for these muffins are as follow:
Banana Strawberry Muffins
1 1/2 c. flour
1 tspn. baking powder
1 tspn. baking soda
1/2 tspn. salt
3 large very ripe bananas, mashed
3/4 c. sugar
1 egg
1/3 c. butter, melted
strawberry jam
Coarse sugar (optional)
1. Preheat oven to 350 degrees. Coat muffin pans with non-stick spray. Mix together the flour, baking powder, baking soda and salt; set aside.
2. Combine bananas, sugar, egg and melted butter in another bowl. Fold in flour mixture and mix until smooth, (Don't over mix or the muffins will be dry, just until ingredients are blended).
Scoop into muffin pans. *Add a heaping tspn. of strawberry jam in the middle of each muffin and sprinkle with the coarse sugar.(Makes 12 muffins)
3. Bake in preheated oven and bake for 25 minutes or until muffins spring back when lightly tapped or toothpick comes out clean when inserted in a dry spot.
*You can use as much jam as you would like in the muffins.
