It's that time of the year when I can start making soup again. I always make a big pot and we have it at different times of the week and may even give some away. I make different kinds of soup and today I made Beef Barley Soup. Here's how I made it.
Beef Barley Soup
3 tblspns. olive oil
1 c. each of chopped carrots, chopped onions and chopped celery(you can include some of the tender leaves too)
About 1 to 1 1/2 lbs. boned in beef for soup
6 c. chicken broth - fat free
6 c. water
1 c. medium barley
3 beef cubes
Fresh ground black pepper
Handful of chopped parsley, fresh or dried
(No salt is necessary)
Sauté the vegetables in a large soup pot for 10 minutes at medium temperature, stirring occasionally. Add the broth, water, beef and barley. Then drop in the beef cubes and ground pepper to taste and the parsley. Bring to a boil and then lower to a simmer. Simmer for 1 hour with no lid, till barley is tender.
It's a tasty and hardy and healthy soup. |
