Recipe of the Week; Crabmeat Casserole

This recipe came from a very old local cookbook.  I gave it ** because it tasted good, the kids liked it, but did not love it.  Three stars *** is reserved for recipes that we "love".  You may feel differently about it.  So give it a try.

Crabmeat Casserole
1 8oz. cont. crabmeat
1 stick of butter
1/2 c. bread crumbs
garlic powder
1 cup fresh sliced mushrooms (I cut them in large chunks)
1/2 c. chopped onion, (I used a red onion for more color)
parsley
1/2 cup chopped celery
lemon juice
1 cup shredded sharp cheddar cheese
salt and pepper to taste (It didn't call for it but I felt it needed it)

In a frying pan, melt 3/4 stick of butter, sauté onions, chopped mushrooms and celery, salt and pepper to taste.  Add a squirt of lemon juice.  Mix in crab meat and bread crumbs and spices and salt and pepper in a bowl.  Take remaining butter and coat casserole dish.  Layer sliced mushrooms on bottom and put crab mixture on top.  Sprinkle half the cheese and bake 1/2 ;hour at 375 degrees.  Remove from oven and put on the rest of the cheese and put it back in the oven just until the cheese melts.
