Coq au Vin actually means cook with wine in French (I looked it up). This was a recipe from my Slow Cooker cook book. It is a simple version of Coq au Vin. It called for dried herbs, but I have fresh ones growing in my garden so I used them. It also says to put it over rice, but I served it with mashed potatoes. My husband likes those better then rice. I didn't have red wine so I used red cooking wine. It was still good and gave it **.
Simple Coq au Vin
4-6 chicken legs
salt and fresh ground pepper- to taste
2 tblspns. extra virgin olive oil
1/2 lb. sliced mushrooms
1 onion sliced into rings
1/2 cup red cooking wine
1 tspn. fresh basil leaves chopped
1 tspn. fresh thyme leaves
1 tspn. fresh oregano, chopped or 1/2 tspn. dried
hot cooked rice or mashed potatoes
Sprinkle chicken legs with salt and pepper. Heat oil in large skillet; brown on all sides. Remove chicken and place in slow cooker and turn it on low heat. Sauté mushrooms and onion in same skillet. Add wine; stir and scrape brown bits from bottom of skillet. Ad mixture to slow cooker. Sprinkle with basil, thyme and oregano. Cover and cook on low 8 to 10 hours or on high 3 to 4 hours. Makes 4 servings. |
