Recipe of the Week; Sausage and Bean Casserole

Sausage and bean casserole was my recipe of the week.  I got it from an a recipe book simply called "The Italian Cookbook".  Of course I had to revise it to make it my own and made it simpler to make.  I gave it ***, which means excellent, because my husband liked it and it was a good way to use up left over sausage and peppers.  Recipe to follow:

Italian sausage, left over or browned fresh
2 tblspns. Extra virgin olive oil
1/2 large sweet onion, chopped
2 garlic cloves, chopped
1 green ( I used yellow, you could use any color pepper you like) cut into thin strips
I added - porcini mushrooms, cut into quarters
1 large tomato cut up into small pieces
1 can (14oz.) cannellini beans
salt and freshly ground black pepper - to taste

Heat the olive oil in a frying pan and add the peppers, onions, mushrooms and garlic and sauté until they are soft.
At the same time brown your sausage (if it isn't already browned from a previous meal) in another pan. 
After the sausage is browned then add it to the pepper mixture (or if the sausage is left over, just add it).
Then add the beans and tomato and salt and pepper.  Bring to a simmer and with a lid on cook until the peppers are soft and the sausage is done.  If it's a little dry, you could add a little white wine or water.  Have some crusty Italian bread to sop up the juices.  YUM!
