My recipe of the week was a no-bake chocolate cheese cake. My family gave this recipe *** (excellent) because of the taste. I gave it *** not only because of the taste but because it was 'no bake' and in the summer, that's great; plus it is chocolate cheesecake. I found the recipe in Hershey's Chocolate Cookbook. I revised it to make it my own; the recipe called for a crumb-nut crust, but I substituted graham cracker crust. It also called for a peach topping and I used store bought cherry pie filling instead. Try it, you'll like it!
No-Bake Chocolate Cheesecake
Graham cracker crust
1 1/2 cups of semi-sweet chocolate chips
1 1/2 pkgs. cream cheese, softened
1/3 cup sugar
1/4 cup butter, softened
1 1/2 tspns. vanilla
1 cup heavy cream
Cherry pie filling
Prepare graham cracker crust and press into a 9 1/2" spring form pan and set aside. Melt chocolate chips in a double boiler, stirring until smooth. Combine cream cheese and sugar in large mixer bowl, add butter, beating until smooth. Blend in vanilla. Beat in melted chocolate all at once. Whip heavy cream until stiff; fold into chocolate mixture.
Spoon into prepared crust; chill for about an hour and then spoon the cherry pie filling on top covering the whole cake. Refrigerate until read to serve, then remove the spring side of pan. Top with the whipped topping of your choice. Enjoy!
