Food; Creamy Cheesy Spinach Dip

I found this recipe on allrecipes.com.  It called for mozzarella cheese but I substituted a soft provolone cheese for the mozzarella and it called for garlic which I didn't use.  Everyone liked it and the whole thing was gone in no time and with so much spinach in it, I dubbed it to be healthy.  Serve it with your favorite crackers, it's a little too hardy for chips.  Enjoy the recipe.

Creamy Cheesy Spinach Dip
1 tblspn olive oil
1 small onion, finely chopped
2 (10oz,) pkgs. frozen chopped spinach- thawed and drained
1/2 c. milk
6 oz. cream cheese
1 c. shredded soft provolone cheese, divided
1/2 c. shredded cheddar cheese
4 dashes Worcestershire sauce
salt and pepper to taste

1. Preheat oven to 425 degrees.  Grease a 1 1/2 qt. shallow baking dish with olive oil
2. Heat olive oil in a large pot over medium heat.  Cook and stir onion in hot oil till lightly browned about 4 minutes.  Add spinach and simmer until spinach is hot about 5 minutes.  Drain any liquid from mixture and transfer to a bowl.
3. Pour milk into pot and return pot to medium heat.  Melt cream cheese into the milk; cook and stir together about 3 minutes.  return spinach mixture to pot with 1/2 c. of the provolone cheese and cheddar cheese;  stir to combine.  Season the mixture with the Worcestershire sauce, salt and pepper.  Pour the mixture into the prepared baking dish and top with 1/2 c. provolone cheese.
4. Bake in preheated oven until bubbly and golden brown on top.  About 20 minutes.  Serve with your favorite crackers.
