Roast beef with potatoes and carrots are indeed comfort food. It's also one of the easiest dinners you could make. This is my husband's favorite meal. I like to make this on Sundays because I put it in the oven before I go to church and when I come home, it's all done.
No recipe per say, I cut slits in the meat and stuff it with pieces of garlic halves, then put it in the pan and surround it with peeled and cut potatoes and carrots also peeled and cut in chunks. Sprinkle everything with extra virgin olive oil, salt and pepper and a handful of grating cheese on top of the meat (as in the first picture). The cheese doesn't actually add to taste but makes a little crust on top. Add a little water, cover with the lid or aluminum foil and put in the oven then turn it on at 325 degrees. About 2 1/2 to 3 hours later (depending on the size) your dinner should be done. Just baste once in a while (my husband does that). The meat should be very tender and the vegetables should look roasted. Let it sit outside the oven with the lid on for about 15 minutes before cutting to let the juices go back inside the meat.
