Food; My Family's Favorite Tripe

The cooler weather makes me think of foods I don't cook all summer.  There are a number of them, but today Tripe is the dish.  It's one of those dishes that either you love it or hate it.  We love it.  The soft chewy texture can be compared to cooked calamari but less rubbery.  It takes on the flavor of the sauce it's cooked in.  There are other ways of making tripe but for me and my family it's always made with Italian tomato sauce.  You must have a loaf of crusty Italian bread to dip in the sauce.  Mangiare buono!

Dessert; Brown Sugar Baked Apples

Baked apples are not only delicious but a healthy snack too.  They are sweet and juicy and it's a good way to use up your left over apples.  There are a lot of recipes for bakes apples; everyone has their favorite.  Here is mine: Core the apples and place them in a dish.  Fill them up with dark brown sugar and place a small piece of butter on top as in the top picture.  Then pour orange juice all over them and bake them in a 375 degree oven for at least 45 minutes.  It's that simple!  Enjoy!

Grandchildren; Sweet Olivia

This is Olivia, our youngest grandchild.  She is 6 years old and a sweetheart.  Since I posted about our other two grandchildren, I would be amiss if I didn't show Olivia.  She slept over our house last week and enjoyed these cookies I made.  She's sweet, cute, smart and makes us laugh, especially grandpa; he gets a real kick out of her.  We love our Olivia.  Actually her name is Olivia Starr, not many people know that, and she is a "Star" in our eyes.

Recipe of the Week; Chewy Chocolate Peanut Butter Cookies

I got this recipe from a Hershey's cookbook but I used extra large eggs instead of the regular size and I noticed that since I started baking with larger eggs, my cookies and cakes came a little fluffier and lighter.  This recipe got *** for obvious reasons, chocolaty and peanut butter. They are yummy.  They also stayed soft and chewy the next day.  Your family will love you for making them these cookies.  What's better for an afterschool snack then a glass of milk and delicious home made chocolate cookies. Just a tip, when you bake on parchment paper, you cookies will never stick.   Here's the recipe!

Just Because; I love colored corn

Colored corn is one of nature's most beautiful creations.  I found this tree when my husband and I went to buy apples at an apple orchard.  Well,  we were too late and they only had a few apples left but they did have a lot of pumpkins and this beautiful tree made out of colored corn.  How creative this farmer was to display his corn.  Of course, I had to buy some.  I love colored corn, but so do the squirrels so my husband sprayed mine with clear lacquer hoping it will keep the little critters away.  We'll see!

Tips; A brighter bathroom

My bathroom is the only room in the house that I need to brighten in the winter.  This window is on a side of the house that gets no sun, especially in the winter.  As a result, it can get dreary, so I brighten it with color.  In other rooms, as in previous posts, I darken the rooms for the winter to make them appear warmer and homier, but the bathroom is different.  So, I took down the darker color shower curtains and rugs and window curtain and replaced them with white curtains and pink carpets.  I did the same with soap dish and Q-tip holders and decorations on the toilet top.  Now when I walk in the bathroom, it doesn't seem so dark and dreary.

Food; My mother's potatoes Italian style

This is my mother's version of Italian potatoes.  It was one of my favorite side dishes that she made.  It goes with all kinds of meat.  One of my granddaughters liked it so much she asked me to make it for her one day after school, just the potatoes, nothing else. My Family; Shelly and Marinda showing off their new scarves

I love our daughters.  Our firstborn, Shelly (real name, Rachelle) is in the red and our second, Marinda Mary is in the black.  I'm not sure where Marinda got the scarves but I think it's cool that they both have one.  We all tease each other and say things that most people would get upset with but we just laugh at each other and ourselves.  I enjoy going shopping and out for lunch with them.  Shelly mostly because Marinda has to work 5 days a week.  Shelly works 3 days a week.  I pray every day for God's blessing on them and I thank God for our daughters.

Grandchildren; Celebrating Alexis' 18th Birthday

This week we are celebrating Alexis' 18th birthday. Her mother made her a ladybug birthday cake at Lexi's request.  She also wanted meatloaf wrapped in bacon, mashed potatoes roasted asparagus and crescent rolls, which she got. 
She grew up to be such a lovely sweet girl and we love her.  Happy Birthday Alexis! 

Nature; Where have all the fall leaves gone?

Remember the song, "Where Have All The Flowers Gone"?  Well, you could say the same thing about the fall leaves.  Some people just leave them on the grass thinking it will be mulch for the lawn the following spring.  We tried that, it doesn't work.  We just had to rake them up then.  It actually takes years for dead leaves to turn into mulch.  I remember when we used to rake the leaves by hand.  We used to have a lot more trees then too.  The kids used to join in because when we got a big enough pile they used to jump in it.  It was fun.  Then when the sun started to go down my husband would make piles and burn them.  I love the smell of fall leaves burning.  But, now with all the ordnances, you can't do that anymore.  Also the older the body gets the harder it is to rake them so now we have a leaf blower as you can see in the first picture.  Where have all the fall leaves gone?  Well in my yard they go behind the swing set or around the edges of the field  behind the pool, and that's where they will stay and build up and some day become mulch.

Food; Salmon Salad; Not your typical salad

Who said salads have to be boring?  When I was a little girl, my mother made a lot of salads and I hated them.  Salad was always just ice berg lettuce with celery and tomatoes and oil and vinegar.  Now salad can be anything you want it to be, even the meal itself.  In this picture I made a salad with Italian mix of greens, salmon, roasted almonds and dried cranberries and Ranch dressing and lots of freshly ground black pepper.  It was delicious and filling and best of all healthy.

It was so nice outside today and as I was walking around I noticed the trees around my house.  Just a few days ago, they weren't too colorful, but now they are.  The white birch trees behind my house are so pretty in yellow with the ground all yellow with the fallen leaves and my dogwood is now red and the flaming bush behind it is almost all red too.  The good Lord created such beauty for us.  It's soothing for the soul to be outside and breathe in the fresh air and enjoy all the colors.

Comfort Food; Breakfast of soft boiled eggs right in their shell

When I was a little girl my mother used to make eggs like this for me for breakfast.  Only she didn't have these nice egg holders, she simply used shot glasses.  She called it "egg with a hole in it".   They are just soft boiled eggs done to your liking.  For large eggs I cook them for 3 minutes, these are extra large eggs so I cooked them for 4 minutes.  The toast has to be cut in lengths so you could dip them in the egg.  Make sure you use a small spoon to dig out all of the egg inside the shell.  It's comfort food because it reminds me of my mother who has been with God since 1993.

Home Life; Clean up inside-Magazine colector

Part of what makes me "old school" is I never throw away a magazine.  You never know you might need something in it 10 years from now! lol  Well, 10 years is up and time to clean up.  I didn't go crazy though, I did save some.  You can see the difference between the magazine rack on the right, half empty and on the left, almost full.  The ones on the table went in the garbage.  Is anyone else out there like me?????

It's clean up time around our house.  Frankie is cleaning out the corner of the house.  He took out some of the shrubs that I planted years ago and grew wild.  I don't know what we will put there in the spring, but it's all cleaned out for now. 
PS.  He does the hard work outside, I do the easy work inside.

Happenings; Britney's 20th Birthday

On October 16th 1994 a girl child was born.  October 16th 2014 a woman is formed from that child.  Our beautiful Britney will no longer be a teenager on the 16th even though we celebrated her birthday today.  Her grandfather and I couldn't be more proud and couldn't love her anymore.  Happy Birthday Britney!

Grandchildren; Olivia's Fall tree

I found this picture in a drawer last week.  My granddaughter, Olivia made it when she was in pre-school.  I know because I marked it.  I think it's very pretty, I'm glad I saved it.  I still have some art work that my daughters made when they were in grade school.  That was a long time ago.  Art like that is precious.
