I got this recipe from a cookbook my mother bought me when I got married 44 years ago this September. It's a Goodhousekeeping Cookbook. I have this recipe ** only because the muffins are a little crumbly. I added half and half instead of milk to enrich it a little and added cinnamon sugar on top of them muffins before baking. They are excellent for breakfast.
Cinnamon Apple Corn Muffins
1 pkg. corn muffin mix
1/2 apple, peeled cored and sliced real thin
1/4 tspn. cinnamon
2 tblspns. sugar
1 egg
1/3 cup half and half
Start heating oven to 400 degrees. Prepare mix as label directs. Dip apple wedges in the cinnamon and sugar. Fill 6 greased muffin pans. Fill with half the mixture and top with the apples and top with the rest of the mixture. Sprinkle the cinnamon and sugar that is left over on top and bake about 15 minutes. Makes 6 muffins.
