It seems like we just planted these vegetables and now I had to pull them out. The cucumber plants are done so I pulled them and the green bean plants are done. But to my surprise I was able to get one more serving of beans and two small cucumbers as shown in the bottom photo. I'm not one for green beans but when growing them in your own garden they taste better for some reason.
My husband's favorite dish is the green beans with scrambled eggs. Doesn't sound good but to my delight even my daughters and granddaughters like them. It's a simple dish. You just snap off the ends of the beans and snap them in half and boil them in lightly salted water for 10 minutes then drain them and sauté them in a hot pan with a little canola or vegetable oil till they get a little color to them and then scramble at least 2 eggs that was seasoned with salt and pepper and about a tablespoon of milk; and add that to the beans and stir till the eggs coat the beans and eggs are cooked. It is a simple and delicious and healthy side dish. |
