This originally started out as a Weight Watcher's recipe, but, not anymore. There is nothing Weight Watcher about it and I hate to say it, but much more delicious.
Broccoli and Cheddar Quiche
9" pie crust
2 tspns. olive oil
1/2 c. chopped red onion
1 1/4 c. ricotta cheese
1 c. shredded extra sharp cheddar cheese
2 lg. eggs + 1 lg. egg white
1 tblspn. Dijon mustard
1 tspn. oregano
salt and pepper to taste
10 oz. frozen chopped broccoli, defrosted and drained
1 tblspn. Parmesan cheese
TO MAKE FILLING:
Heat oil in small pan, add onion and sauté until soft, about 3 minutes. Transfer to large bowl and add rest of ingredients. Mix well and pout into pie shell. Bake at 375 degrees for 35 - 40 minutes. Makes 8 servings. |
