This is the perfect summer salad. You could make it ahead of time and serve it warm or room temperature. The green beans, tomatoes and parsley are fresh from my garden.
Potato, Green Bean and Tomato Salad
1. Just quarter a few small red potatoes, skin on.
2. Snap the ends off of fresh green and yellow beans and snap in half.
3. Put potatoes and beans in a pot with salted water and bring to a boil and reduce to a little and cook for 10 minutes.
4. Drain off the water and put in a bowl and add tomatoes, cut in pieces and a few slices of red onion cut in half, sliced very thin.
5. Add canola oil, salt, freshly ground black pepper and fresh Italian flat leaf parsley. Mix together and enjoy!
