Recipe of the Week; Quick Crab Soup

This recipe got *** from my family.  It not only was delicious,
but it was quick and easy to make.  This recipe was courtesy of Paula Deen.  She called it a stew, but it really was a soup.  It called for dry sherry but I used to cooking sherry instead and the claw crabmeat that comes in cans instead of fresh and she called for a small onion, but I like onions so I used a medium onion. 

QUICK CRAB SOUP

2 Tblspns. butter
1 medium onion, chopped
1 (10 1/2oz.) can condensed cream of potato soup
1 (10 1/2oz.) can condensed cream of celery soup
1 soup can milk
1 soup can half and half
1 lb. (two 8oz. cans) claw crabmeat
1/4 c. cooking sherry
salt and pepper

In a large saucepan, melt the butter and sauté the onion until translucent, 3-4 minutes.  Add the soups, milk and half and half.  Add the crabmeat and bring just to a boil.  Add the sherry and salt and pepper to taste.  Serve hot immediately and enjoy!

  1. when I saw the pictures of your zucchini it made me think of what I did to the zucchini I had given me. I used Tastefully Simple Everyday Grillin' Seasoning....peeled and sliced the zucchini....sprinkled with olive oil and the seasoning...a little salt and pepper...let sit overnight...grilled them tonight...they are delicious....learned that from my son, Jimmy !
