Food; Blueberry Muffins

Everyone in my family loves home made blueberry muffins.  I have been using this recipe for years and it always comes out super moist and delicious.  Sprinkled with coarse white sugar before baking makes them even better.  Here is the recipe.

Blueberry Muffins
Preheat oven to 400 - makes 12 muffins
Beat together:
1 large egg
1/2 c. milk
1/4 cup salad or canola oil
zest and juice of half a lemon  (This is optional)

Add:
1 1/2 cups flour
2 tspns. baking powder
1/2 cup sugar
1/2 tspn. salt
1/2 tspn. vanilla

Mix together with a wooden spoon;
To one cup of blueberries dust with enough flour to coat all the berries.  (Just toss them all together in a bowl so they don't fall to the bottom of the muffins)
Add the dusted blueberries to the batter gently and drop in greased muffin pans and sprinkle with coarse white sugar or brown sugar; bake in a preheated oven at 400 degrees for about 20 minutes.
