Food; Penne pasta with tuna fish and tomato sauce

This is a good dish to make in the middle of the week when you don't want to spend a lot of time cooking dinner.  It's also healthier than meatballs or sausage in the tomato sauce (although that is delicious).  But this is a good Italian dish to make also.  I use penne pasta but you can substitute any kind of chunky pasta you like.

Penne Pasta with Tuna & Tomato Sauce
1 lb. penne pasta
2 (5oz.) cans of Albacore tuna in oil*
1 (24oz.) jar of your favorite tomato sauce (I use one with mushrooms in it)
1/2 can flat anchovies
1/2 medium size onion, chopped
2 cloves of garlic, chopped
1/4 c. grated Parmesan cheese
Fresh grated black pepper

Heat a saucepan with about 2 tblspns. olive oil; add the chopped onion and chopped garlic and sauté for about 2 minutes then add half of the can of anchovies, breaking it up with a wooden spoon.  It will dissolve.  When onions are getting soft add the 2 cans of tuna, the jar of sauce and about 1/4 cup of water, the grated cheese and freshly grated black pepper.  Reduce the heat to a simmer with the lid sitting ajar on the pot.
In the meantime fill a large pot with water and bring it to a boil, salt the boiling water and add the pasta and cook till desired doneness.  Drain the pasta and add the sauce.  Add a little more cheese if you desire.  If you like tuna fish you will love this.

*Use albacore tuna because the regular tuna gets too mush.
