Food; Zucchini Patties

Zucchini patties are a staple as long as I keep getting zucchinis from my garden.  This recipe was given to me by my sister-in-law many years ago.  I have revised it and added grated parmesan cheese to make it more Italian.  There is no written recipe, so here goes.

Zucchini Patties

Grate one large or two smaller zucchinis in a colander placed in the sink.  Then grate a medium onion right in the zucchini in the same colander.  Then squeeze both the zucchini and the onion with your hand until almost all the water has drained out; which is the reason for putting it in the sink.

Put the grated zucchini and onion in a bowl and add about 3/4 to a cup of flour (depending on how big the zucchini is), one egg, 1 tspn. baking powder, salt and pepper to taste, and 1/4 to 1/2 cup grated Parmesan cheese ( according to taste). 

Mix it all together and heat up a large frying pan to medium heat, with about 3 Tblspns. Canola or Vegetable oil and when the oil is hot drop in zucchini batter like you would pancakes.  When they start to get brown around the edges turn the patties and continue cooking until they are done inside and not wet.  When they are done, put them on a platter lined with paper towel to absorb the grease and sprinkle with a little salt while still hot.  Cook them in batches if necessary, you don't want to crowd the patties or they will take way too long to brown.  Enjoy!
