Gardening; Lovely hydrangea

Hydrangeas are my favorite flower.  Not only are the flowers beautiful, but they last a long time and easy to dry and keep all year in your house as a dried flower.   I love the color of this one in the back of my yard.  I have three different varieties.  This is the most common one.  I have one called Vanilla Strawberry and as soon as the color shows up on them I'll show you them.  The newest one is called Little Quick Fire, it's a miniature one and red.  But, it's new this year so didn't bloom yet.

Dessert: Zucchini Cobbler, If you like applie pie, you'll love this.

This recipe came from AllRecipes.com.  I didn't have fresh lemons so I used bottled lemon juice and it came out just as good as when I made it with fresh lemons.

ZUCCINI COBBLER
8 cups peeled, cubed zucchini
2/3 c. lemon juice
1 c. white sugar
 1 tspn. ground cinnamon
1/2 tspn ground nutmeg
4 c. all-purpose flour
2 c. white sugar
1 1/2 c. butter, chilled
1 tspn. ground cinnamon

1. In a large saucepan over medium heat, cook and stir zucchini and lemon juice until zucchini is tender, 15 to 20 minutes.  Stir in 1 cup of sugar, 1 tspn. cinnamon and nutmeg and cook one minute more.  Remove from heat and set aside.

2. Preheat oven to 375 degrees.  Grease a 10x15" baking dish.  (I used a 10x11).  In a large bowl, combine flour and 2 cups sugar.  Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir 1/2 cup of butter mixture into zucchini mixture.  Press half of the remaining butter mixture into bottom of prepared pan.  Spread zucchini mixture over top of crust and sprinkle remaining butter mixture over zucchini.  Sprinkle with 1 tspn. cinnamon.

3.  Bake 35 to 40 minutes or until top is golden.  Serve warm or cold.

I love nature.  I love seeing bumble bees buzz all around my flowers.  I took these pictures in the spring and forgot I had them.  It's hard to get a picture of a bee because they are so fast and active.  But patience paid off and I got these pictures.

Happenings; Camera broke

We went to Knoebel's today and it was really too hot to walk around, but we had a good time anyway.  I know the kids did. My husband, my oldest daughter Shelly, and I only went on the train, the Ferris wheel and the haunted house ride but it the kids went on more. I packed a lunch and we got a picnic table and ate first, everyone was hungry then, then walked around.  That was the first time I was there in about 15 years and it looked so much different then I remembered.  Anyhow I took pictures but when I got home, something happened to my camera and I can't get it to come on even though I changed the batteries.  Hopefully, I can find someone who can fix it and I can take the pictures off of it and show them.  This top picture is from the 4th of July in my back yard.  Hope you enjoyed your day.

Nature; Super Moon

This is the "Super Moon".  The weather man said it's called that because of the position it's in in relation to earth and it will only be seen twice a year.  It was amazing sitting up there in the sky.  We see the moon practically every night, borrowing there are no clouds but tonight it appeared much larger.  I hope you had to chance to go out and see it in person.

I know, I'm showing a lot of flowers.  I can't help it; I love flowers.  I love all flowers, all colors and shapes and sizes, but marigolds are my husband's favorite, so every year we have to get some yellow and orange marigolds.  The small ones in particular.  They look so small when you plant them but they spread out and fill in empty spaces and that's when they looked their best.

Food; STuffed Zucchini

The first cooked zucchini for this year was a stuffed zucchini.  Frankie and I love it and ate the whole thing for supper.  So, sorry, no leftovers.  I don't have a written recipe for it so I'll just tell you how I made it.

Stuffed Zucchini
Cut a zucchini in half the long way and cut out the center leaving a 1/4" wall of the zucchini.  Chop the scooped out zucchini and put it in a bowl.  Add about half a chopped onion, 1 egg, about 1/2 cup breadcrumbs (depending on how big the zucchini is), hand full of grating cheese, salt and pepper and drizzle with canola or extra virgin olive oil.  Mix it together and stuff it in the zucchini shells.  Drizzle a little more oil on top and top it with grated parmesan cheese.  Put them in a roasting pan and pour some water in the bottom, being careful not to put water on the zucchini, and bake in a 375 degree oven for about 45 minutes, or until the zucchini is tender.
You can add different cheeses if you want to.

Did you ever notice how happy you are when you see the blue sky after the storm clouds clear out.  You know it's there but during the storm you temporarily forget.  That's how it is with God.  He's always there even when the storm clouds of life darken your world.  All you have to do is remember and reach out for Him.  He's always there to help you through the storm.

This is Alexis our second granddaughter.  Sometimes we call her Lexi.  She had the biggest most beautiful eyes when she was a baby.  They still are beautiful.  A friend of my once referred to her as the little girl with the dancing eyes.  She loves cookies, singing and is very smart.  When she graduates she wants to help people who have a hardship.  She's kindhearted and loves God.  We love Alexis.
