Dessert

These are two more desserts that I make every year for my family.  They are traditional.  The top one is a Ricotta cheese Pie and the bottom one is simply called Italian Easter Bread.

ITALIAN RICOTTA CHEESE PIE
3 c. ricotta cheese
1/2 cup sugar
1 large Hershey bar, broken in small pieces
1 tspn. vanilla
1or 2 tblspns. orange zest
1 egg
9" pie crust (bought prepared pie crust is fine)
1. Beat egg in a large bowl and mix in the ricotta and sugar.
2. Add the rest of the ingredients to the cheese mixture and put into pie crust.
3. Top with lattice crust and brush with egg wash.*

* Equally good without the top crust
Bake at 350 for 35 minutes.

ITALIAN EASTER BREAD
This one is good by just using a frozen bread dough, defrost and let rise and knead in anisette seeds and raisins or dried fruit and sliced almonds(optional).  Cut in two and roll into ropes and twist enough times to squeeze in 5 raw, colored eggs. Brush with melted butter.  Let rise again and bake at 375 for 20 minutes or until golden and sounds hollow inside when you tap on it.  After it's cool, drizzle with simple glaze and sprinkle with colored candies.
