As you can see I like blueberry muffins, and so does my family.  Here is another recipe.  A little easier, and the muffins are a little lighter in texture and also very delicious.  I have been using this recipe for a long time.  Recipe to follow:

BLUEBERRY MUFFINS
Makes 12 muffins - Bake at 400 for 15 to 20 minutes

Beat together with a wire whisk:
1 egg
1/2 c. milk
1/4 c. canola oil

Add with a wooden spoon:
1 1/2 c. flour
1/2 c. sugar
2 teaspoons baking powder
1/2 teaspoon salt
The zest and juice of half a lemon

Mix by hand a heaping cup of blueberries and enough flour just to coat all the berries and add delicately to the mixture.

Spoon in greased muffin pans and sprinkle with coarse white sugar.  Bake 15 to 20 minutes or until golden and done.
