Seedlings Started in Ice Cream Cones, Part 2

About a month later and this is what my seedlings look like. The two in the middle are flowers and were planted later then the vegetables. There are more but I couldn't fit them all on. Soon they will be able to go outside during the day and bring them in at night. I won't bore you with all of the stages, but will show you when they are planted and then the fruit of my labor. lol

Grandchildren
Here are my grandchildren, on Easter Day, all bright and sunny, just like the day was. I hope everyone had a blessed Easter.
Nature; Humming bird feeder

April 25th. My husband hung this humming bird feeder for me on our front porch. It will be between 2 hanging baskets. The instructions were to hang it early before they even come. It will be interesting to see how long it takes to see the humming birds feeding from it. Hopefully I can get a picture of it.

Recipe of the Week: Chocolate Glaze

Chocolate Glaze
This recipe got *** because it was easy to make and everyone loved it.
Combine 2 tblspns. butter with 1/2 cup semisweet mini chocolate pieces and 2 tblspns. milk in a small saucepan. Cook over low heat until chocolate millets. Remove from heat. Stir in 1 cup sifted 10X sugar. Pour on top of whatever you want.
NOTE: I put it on brownies. You can put it on your favorite brownie recipe or pound cake or any cake you want.

Old Family Recipes

Here are some old family recipes that I make for Easter. They are both from Italian traditions. The cookies above are made also for Christmas, weddings, graduations or any occasion. This recipe is from my husband's mother and aunt. They are Sicilian and my family is from northern Italy so I have a good combination of Italian recipes. It's a good recipe too because it makes a lot of cookies. The Easter Pizza on the bottom is a recipe give to me by my very good friend, Marie. We have a Christian spiritual bond as well as a long time friendship so she is considered "family". Both recipes are to follow.
BISCUITS (ITALIAN COOKIES)
Preheat oven at 375 degrees
Cream Together:
1 lb. butter, room temperature
2 cups sugar
Add and Beat well:
12 eggs
1 cup milk
1 tsp. vanilla
Add:
12 heaping tspns. baking powder
Add (A little at a time):
12 cups of sifted flour
Add a little more if necessary. The dough will be right when the dough no longer sticks to your fingers. You can use beaters in the beginning but you will need your hands to continue mixing when the dough gets stiff.
Roll into balls or any shape you want about the size of a walnut.
Bake for about 8 minutes or until at lightly golden on top.
(You can tell this was handed down by the instructions. )Enjoy!

ITALIAN HAM PIE OR EASTER PIZZA
Preheat oven at 350 degrees
Pie Crust:
Blend with pastry blender:
6 cups flour
1 cup Crisco
2 1/4 tspn. salt
4 tspns. baking powder
In another bowl Mix together:
1 1/2 cups water
6 eggs
Mix together like you would a pie crust. Save 1/3 of the dough for the top and roll out the rest of it on a floured surface, flouring the rolling pin well, the dough will be soft. Place dough in a 9 x 11 baking pan (if you have one a little larger, even better) over lapping the sides.
Filling:
1 lb. ham, cubed
1 lb. black ham cappacola, cubed
1 lb. muenster cheese, cubed
1 lb. brick cheese, cubed
Layer these in the pan with the crust
Mix together:
12 eggs
1 lb. whole milk ricotta cheese
1 1/2 cups grated Parmesan or any grated cheese
black pepper to taste
Pour this on top of the ham and cheese layers spreading it all over the top. It will sink in while baking.
Roll out the last 1/3 of the dough and place it on top, sealing the sides and cut off any excess dough. Brush an egg wash. (1 egg beaten with a little milk; you will not need the whole mixture).
Bake at 350 for about 1 hour.
Allow to get cold and set before serving. Enjoy!

This is a great dessert for the summer, there is no baking required.
It's light and my family eats the whole bowl at one sitting.
Pound Cake with Vanilla Cream and Strawberries
3 6oz. containers of fat free plain or vanilla yogurt
1 4-serving size package of instant vanilla pudding
1 8oz. container of low fat whipped dessert topping, thawed
1 regular size pound cake, sliced and broken
Fresh Strawberries
1. In medium bowl, whisk together yogurt and one fourth of the pudding mix until smooth. Gradually add remaining pudding mix to yogurt, whisking until smooth after each addition. Fold in whipped topping half at a time.
2. Layer the pound cake pieces, cream and strawberries and then repeat layers till all used ending with cake and strawberries. Dust top with powdered sugar and refrigerate till ready to use. Refrigerate leftovers.

I would be amiss if I didn't talk about my one and only love, my husband, Frankie, shown above with 2 of our grandchildren and planting mums for me. We have been married for 43 1/2 years. You can imagine we have a lot of stories. I wouldn't have wanted to share anyone of them with anyone else. The first robin of the spring, for me anyhow. My husband spotted several of them all in one spot, but by the time I got there with my camera, only this one was left and he graciously posed so I can take his picture. What a lovely site! I love birds...

As you can see I like blueberry muffins, and so does my family. Here is another recipe. A little easier, and the muffins are a little lighter in texture and also very delicious. I have been using this recipe for a long time. Recipe to follow:
BLUEBERRY MUFFINS
Makes 12 muffins - Bake at 400 for 15 to 20 minutes
Beat together with a wire whisk:
1 egg
1/2 c. milk
1/4 c. canola oil
Add with a wooden spoon:
1 1/2 c. flour
1/2 c. sugar
2 teaspoons baking powder
1/2 teaspoon salt
The zest and juice of half a lemon
Mix by hand a heaping cup of blueberries and enough flour just to coat all the berries and add delicately to the mixture.
Spoon in greased muffin pans and sprinkle with coarse white sugar. Bake 15 to 20 minutes or until golden and done.
Enjoy!
