"Cardoons" (I'm not sure of the correct spelling), you see it's a very Sicilian dish that you can only get in the spring. They are ugly, smelly and dirty and thankfully very hard to find; but also packed with iron. But, because I love my husband and they are one of my husband's favorite thing to eat, I will clean, and cook them. You could eat them cooked and cold right out of the dish like the first picture or scrambled with egg like in the bottom picture. Some people also take them apart and bread and fry them, but my husband was brought up with them cooked just with the egg. Has anybody out there every had this delicacy??? I would be interested in knowing.

Never heard of them. What's the taste similar to?
