Recipe Of The Week

Like I said, I like to collect recipes and try a new one every week on my family.  We rate them together, but this one I rated myself, it was delicious.  Blueberry Streusel Muffins, they aren't too sweet, just sweet enough and very moist, so I rated them with three stars which stands for excellent.

BLUEBERRY STREUSEL MUFFINS
Muffin Batter:
1/2 cup sugar
1/2 cup butter, softened
2 egg
2 1/3 cup flour
1 tablespn. + 1 teaspn. baking powder
1 cup milk
1 teaspn. vanilla
1 1/2 cup fresh blueberries

Blueberry Streusel Topping
1/4 cup sugar
1/3 cup flour
1/2 teaspn. cinnamon
1/2 cup butter

To prepare topping combine sugar, flour and cinnamon in a small bowl.  Cut in butter until mixture resembles crumbs, set aside.

Preheat oven to 375.  In a large bowl, combine the sugar and butter, creaming until  light.  Add the egg, mixing well.  In a separate bowl, combine the flour and baking powder, add the dry ingredients to the creamed mixture alternately with the milk, stirring well after each addition.  Stir in vanilla and blueberries (dust the blueberries with a little flour so they don't sink to the bottom of the muffins).  Spoon into muffin pans filling each 2/3 full.  Sprinkle Streusel topping over muffins.  Bake for 25 to 30 minutes or until done.  Makes 16 to 18 muffins.

  1. The topping was very good, and I like all the blueberries, but I thought they could have been a little sweeter. =)
